2. FOOD SAFETY
Complete trace ability is available and no drugs are used. Organic seafood only certifies the feeds, but each of these Tunas has complete history of where the fish has been and what has been fed since its birth. There is a significantly lower chance of exposure to bacteria in comparison to other ranched Tunas.
In addition, Kindai Tunas are lower in mercury level than wild Bluefin Tunas and/or ranched Bluefin Tunas, simply because: 1) The university technicians feed them small size fish (low in mercury contamination level because their life spans are shorter than larger fish) even when Kindai Tuna becomes over 200 lbs size; 2) A wild Tuna has to eat huge amount of fish to obtain high enough calories to support its “non-stop-swimming” life style across the oceans. On the other hand, a Kindai Tuna only needs to swim within the cage, so it requires eating significantly less volume of feeds throughout its life, which means less absorption of mercury from its feed as well. There are date available to prove these benefits.
4. EXCLUSIVITY
No matter how much one is willing to pay for this Tuna, only a few pieces of Kindai Tunas are imported into the US. Unlike profit-seeking companies, the university is not aiming at maximizing the profitability by mass-producing these Tuna. A “handcrafted” Tuna.
